
Deep Submerge: A Kaioh cocktail
This is one of the most elegant, complicated, and expensive cocktails I’ve ever made. Michiru would have it no other way. It really does work for her, I think–it’s beautiful, and floral, and sparkles on the palate. It’s one of my favorite cocktails I’ve ever come up with, honestly. It’s like walking through a carefully manicured garden and ending up drunk.

I use a standard shotglass for all measurements, because I think it makes it easier, and for my money, the best bar shaker you can buy, if you don’t have one, is this oxo one.
You will need:
- one shot cucumber soda–I use Dry brand, but you can also just infuse soda water with cucumbers
- one shot highly botanical gin–the name of the game here is to pick a nouveau gin, not something high in juniper. I use Whistling Andy Pink Peppercorn and Pear
- 1/3 shot Teisseire mint syrup –it’s gotta be this French brand, the flavor and color are just right
- champagne to top
- hibiscus flower in syrup to garnish
Put everything but the champagne in your shaker with ice, shake until chilled. You might need to drink a little down, and then top with champagne. Using a pair of chopsticks, lower your flower into the bottom of the glass for presentation.
